We KNOW Ted Olsen was in on it due to all his lies about the fake phone calls from "Barbara". He changed his story at least three times, with the truth emerging at the only 9-11 trial (that I am aware of) when it was shown that a call from Barbara to Ted lasted "O" seconds. So much for hijackers with box cutters. Wonder what his reward was for such evil lies that painted the official 9-11 narrative.

I have read many references to some people being warned against coming to work at the twin towers that day as well.

San Francisco Mayor Willie Brown was warned the night
before not to travel on 9/11. Little has come out about that,
although that cryptic story appeared in the press at the time.
Today Brown was at the SF funeral of Warren Hinckle.
Salman Rushdie (then under the protection of British
intelligence) was also warned not to fly from Canada
to the US that day. That story was in one of the top
Canadian papers in the 9/11 edition that hit the streets
before the attacks took place.
Someone I know flew from Dulles Airport outside of DC to SF on
the night of 9/10 and said there was an unusually
large security presence meeting their plane
arriving from Europe. Normally security guards
would not have been INSIDE the ramp between the plane
and the gate, but that night they were, and with bomb-sniffing dogs.
One official excuse for the breakdown of the US air defense system on
9/11 was that they were prepared for an attack by planes from outside
the US but not from within. That is an obvious cover story, but
maybe some diversionary stories were circulating about a possible impending attack
from outside the US or a plot to bomb an airliner or airliners.
American Airlines Flight 77 took off from Dulles
on the morning of 9/11 supposedly headed to LA. My research indicated
it probably went down in the woods outside of Ashland, Kentucky -- which
was approximately the last known location when the plane's transponder went out of contact
with flight control. The local sheriff's office was called to send out a small plane
to look for the crash site of a large airliner in the woods near Ashland. This was reported in the local paper. Then we didn't hear any more.

About a decade ago I found myself standing in line at Tommy's Joynt on Van Ness Ave right behind a short, well-dressed, older black guy.

I'm glad you tried to get something out of him -- it tells us something he
wouldn't give you a straight answer. I had read that his security people
told him on the night of 9/10 not to fly on 9/11, as he had planned to do; who told them?

A better way to look at this question might be: What would be the purpose of issuing these warnings when an operation so tightly controlled left no room for anyone to inadvertently end up on one of the 9/11 flights?

My guess is that to avoid suspicion of anything unusual, ticket sales for the flights remained open as usual, sweeping up a bunch of unlucky passengers that would fit the narrative. There may have been general vetting of those random passengers to avoid anything problematic. Certain travellers (i.e possibly the heavy tech / miitary passenger list on United 93(?)) were deliberately booked on the flights, either for reasons we don't know, or simply to eliminate inconvenient people permanently.
A few people might have fallen afoul of the random ticket sales, but people with some say in the matter chose to steer them out of harm's way. Maybe skip that flight Mr Rushdie, perhaps work on your latest book for another day. This would be similar to the lucky few at the Pentagon who (reportedly) were told to avoid the impact area just prior to the attack there - I believe the Shoestring blog cites a couple of these.
One hole in my theory - the Shoestring 911 blog also has an article somewhere that lists all the celebrities and media figures that narrowly avoided or cancelled their flights on 9/11. Even if you remove the few who were likely making those claims for bogus reasons, the list is ridiculously long. So, there may have been another unknown purpose to these warnings and narrow avoidances.
The story below was interesting. A retired Australian Navy commander meets Bush and Aussie PM John Howard for an awards ceremony. He books a ticket on Flight 77. Howard then invites the guy to visit Arlington with him on September 11th instead. The invitation causes the retiree's ticket to be moved, and he survives the day.
Howard, I've read, was in Washington that week on the advice of Frank Lowy, the Australian-Israeli businessman who occasionally 'advised Howard on matters of foreign policy' (and I don't have the source for that quote handy, but Lowy is treated with massive deference by local politicians). Lowy's Westfield Americas company took over joint control of the WTC with Larry Silverstein's Silverstein Properties on July 24th, 2001.
--Edited to add, I doubt Howard knew anything at all as to what was coming, but Howard has made a career out of taken advice from the rich and powerful and following their instructions to the letter. The Navy retiree seems like a nice guy - possibly one of Howard's security circle decided to suggest the Arlington diversion to one of his advisors.
